Bata as claras em castelo com as batedeira, junte os 50gr de açucar e continue a bater até estarem bem firmes.<br />5-Adicione os restantes 150gr de açucar ás gemas e bata com a batedeira até obter um creme fofo e esbranquiçado. Sem parar de bater vá adicionando o oleo. Junte os iogurtes e misture bem.<br />6-Incorpore em seguida a farinha peneirada com o fermento e envolva delicadamente as claras batidas em castelo. Deite metade da massa na forma e, por cima, espalhe as passas e salpique com o vinho onde maceraram. Tempera-se com sal, pimenta e um pouco de vinho branco. O refogado fica apenas o tempo necessario para que o tomate comece a derreter.<br />Deita-se o refogado na cataplana e faz-se um buraco no mesmo. Poe-se o bacalhau cortado em cubos grossos no meio e juntam-se os coentros picados, o bacon e o pimentao doce. Cobrem-se os cubos com um pouco do refogado. Junta-se mais um pouco de azeite, o resto do vinho e meio copo de agua.<br />Fecha-se a cataplana e vai a lume brando durante 15 minutos. Em paralelo, poem-se as batatas a cozer cortadas em metades. Passado esse tempo, abre-se a cataplana (com cuidado porque sai muito vapor e pode causar queimaduras) e juntam-se as ameijoas, as gambas e afina-se o tempero com sal, pimenta e um pouco de piri-piri. Vai a cozinhar mais 5/7 minutos.<br />No final, leva-se a cataplana fechada para a mesa e abre-se no momento de comer. Batem-se as claras em castelo com uma pitada de sal fino e 4 ou 5 gotas de limão. Quando as claras estiverem firmes, junta-se 75g de açúcar e bate-se mais um pouco.</span></div><div><span class="Apple-style-span" style="font-family:arial;">Quando o leite estiver quase a ferver, baixa-se o fogo e juntam-se colheres de sopa bem cheias de claras. Deixar as claras cozer durante 10 a 15 segundos, vira-las com a ajuda de um garfo tendo cuidado para que não se partam e deixar cozer mais 10 ou 15 segundos. Uma vez cozidas, tiram-se com uma escumadeira e põem-se a escorrer numa rede ou passador. Repetir o processo até termirarem as claras.</span></div><div><span class="Apple-style-span" style="font-family:arial;">Após todas as claras cozidas, tira-se o leite do fogão e filtra-se para tirar as cascas de limão, a canela e eventuais pedaços de claras (de preferencia, põe-se o leite filtrado noutro tacho para evitar que a gordura queimada do fundo do tacho se descole e se misture com o leite creme).</span></div><div><span class="Apple-style-span" style="font-family:arial;">No fim de escorridas as claras, põe-se numa taça funda.</span></div><div><span class="Apple-style-span" style="font-family:arial;"><br /></span></div><div><span class="Apple-style-span" style="font-family:arial;">Leite Creme:</span></div><div><span class="Apple-style-span" style="font-family:arial;">Numa taça, batem-se as gemas e o açúcar (100g) com uma vara de arames até obter um creme homogéneo e esbranquiçado. Juntam-se as duas colheres de sopa de farinha Maizena e continua a bater-se tudo. Adiciona-se gradualmente o leite e o óleo ate formar uma massa homogénea e ligeiramente liquida.<br />Unta-se um tabuleiro com manteiga, polvilhar com farinha e cobre-se o fundo com uma camada da massa preparada (um pouco mais de metade). Com a mão, espalha-se uma camada homogénea do preparado anterior (guisado). Com o resto da massa, cobre-se esta camada e vai ao forno (pre-aquecido a 180C). Normalmente a massa não chega para cobrir todos os vegetais...não faz mal! Fica engraçado ver um pouco de cor, depois da bola estar cozida. A bola nao tem um tempo de cozedura fixo, depende do recheio....convem ir controland a cozedura com um palito. Derreter o chocolate partido em quadradinhos e a margarina (em banho maria ou no micro ondas). Mexer bem com uma colher de pau para ligar bem o chocolate com a margarina.<br />Mexendo sempre com a colher de pau, ir adicionando as gemas, o açúcar, as amêndoas (ou avelãs) raladas e finalmente a farinha + fermento peneirados.<br />Bater as claras em castelo bem firme com uma pitada de sal. Juntar 2 colheradas à massa anterior e misturar energeticamente. Adicionar depois as restantes, envolvendo-as na massa. Deitar tudo numa forma redonda previamente untada.<br />Levar a cozer em forno médio (200 graus) durante 40 minutos. O bolo deve ficar cozido, mas um pouco húmido. Retirar do forno e desenformar passado 5 minutos para uma rede. Com a ajuda de 2 colheres, colocar a massa dentro de forminhas de papel acondicionadas num tabuleiro para muffins. decorar com rodelas de banana, nozes ou pedacinhos de chocolate.<br />Levar ao forno (pre-aquecido a 190C) por 20-25 minutos.<br />Comer "a bruta" num brunch perto de si!<br /><br />P.S. Estes muffins conservam-se relativamente bem, fechados numa lata ou tupperware.
